History

PAPAVERO – THE CULINARY GEM OF POZNAŃ

Restaurant Papavero was founded in 2002 out of a passion for exceptional cuisine and the art of hospitality at the highest level. We serve dishes inspired by the classics of European cuisine, with a particular focus on modern interpretations of Polish culinary tradition. The foundation of our philosophy is seasonality, the quality of ingredients, and professional, discreet service.
Our restaurant is located in a historic tenement house from 1890, designed by Roger Sławski – one of the most prominent architects in Poznań’s history. This Art Nouveau building, listed as a historical monument, has remained a landmark of the city for decades. Within its walls, Poznań’s cultural and social life has flourished – welcoming both residents and distinguished figures from the worlds of art, politics, and sport.

WITH RESPECT FOR TRADITION

For over 23 years, we have created cuisine rooted in craftsmanship, seasonality, and respect for the product. Every dish is made from scratch in our kitchen – using only the finest ingredients sourced from trusted local suppliers. Our menu features compositions based on carefully selected game, regional specialties, and fresh vegetables that change with the seasons.

Of particular note is our legendary Duck with braised red cabbage and signature dumplings, handmade in our own workshop – a dish that has long been the culinary hallmark of Papavero. As one of the first restaurants in the region, Papavero proudly promotes Greater Poland’s culinary traditions, including serving goose in celebration of Independence Day. Here, for years, we have set the standards of gastronomy in Poznań, inspiring both our Guests and future generations of chefs and restaurateurs.

YEARS OF EXPERIENCE

Restaurant Papavero is, above all, a team – experienced professionals with passion, who have co-created this exceptional place for many years. We have operated continuously since 2002, and since 2010 our kitchen has been led by Head Chef Jakub Buchwald – a master of the culinary craft for whom cooking is not only a profession, but also a form of artistic expression. His specialty is meat – particularly game and poultry – which he elevates with refined character, always respecting tradition and seasonality. Privately, Jakub is an avid fisherman and cultivates his own ecological vegetable garden, from which produce often finds its way onto our Guests’ plates – fresh, authentic, and full of flavor.

An inseparable part of the Papavero experience is our team of waiters – many of whom have been with the restaurant for years, deeply familiar with our cuisine, wine list, and the history of the venue. They gladly share not only their recommendations but also anecdotes from the life of the restaurant, creating an atmosphere of hospitality that stays with Guests long after their visit. Sławek, Waldemar, Dawid, Jan – names that have become legends in the service profession.

A NEW INTERIOR, THE SAME QUALITY

In 2018, Restaurant Papavero underwent a thorough transformation, which gave it a contemporary character while preserving its spirit of elegance and hospitality.

Today’s interior combines classic aesthetics with modern design – highlighted by deep green and golden accents, soft lighting, stylish mirrors, and the presence of fresh flowers, which bring a natural rhythm to our space each day. Some of the inspiration came from the owners’ visits to international restaurants during their family travels.

It is a carefully designed setting, perfect for both intimate gatherings and exceptional celebrations. We are delighted to welcome you to Papavero – a place where taste meets aesthetics, and every visit becomes an experience.
