Our Dishes – Tradition & Passion
Every plate that reaches your table is prepared from scratch in our kitchen. Dumplings, pierogi, and noodles are handmade, crafted from traditional recipes with attention to every detail, no matter how small.
Everything we do is rooted in authenticity and building lasting relationships:

Local Ingredients
Our menu is based on products we prepare ourselves as well as those sourced from local and regional suppliers.
Bread
Each day in our kitchen begins with baking fresh bread, made from Polish flour supplied by the Ostrów Wlkp. Mill.
Bednarek Farm
Fruits, vegetables, and preserves crafted according to a family recipe.
Cold-Pressed Juices – Wiatrowy Sad
Juices pressed from orchard fruit grown near the Łódź Hills Landscape Park in the Mroga River valley. Pressed from whole, healthy fruit, without preservatives or added water, containing only naturally occurring sugars.
Pressed Juices – Bracia Sadownicy
Orchard keepers from Kujawy, whose tradition of apple cultivation dates back to 1905. Apples are hand-picked and their juices are pressed without preservatives or added sugar.
Honey – Janczarczyk Apiary – “Bees are our family passion, and honey our sweetest reward.”
A family apiary with over half a century of tradition, tending 300 bee colonies across Natura 2000’s Noteć Valley, using both stationary and migratory beekeeping methods.
Preserves
Every summer and autumn, our kitchen transforms into a workshop for preserves, which return to our menu just months later.
Wines & Spirits
Folwark Pszczew Vineyard
Founded in 2015 in the buffer zone of Pszczew Landscape Park. Vines include Regent, Cabernet Cortis, Souvignier Gris, Solaris, Johanitter, and Riesling – the very same varieties cultivated here 170 years ago.
Smarduch Distillery – Natural Liqueurs & Flavored Vodkas
Located in the historic town of Grodków, Opole region. With more than 15 years of expertise, Smarduch is among the most renowned artisanal distilleries in Poland. Spirits are crafted from fruit, herbs, honey, and spices, aged in glass demijohns and oak barrels, then bottled and labeled by hand.

We are committed to minimizing the environmental impact of our operations by managing resources responsibly, promoting sustainable sourcing, and reducing harmful emissions.
Our goal is to protect the environment around us while supporting the local economy and maintaining economic efficiency.
Education & Engagement
We follow an internal code of sustainable restaurant practices. Our team’s commitment to ecological responsibility brings long-term benefits. We train in energy conservation, waste management, and food-waste reduction – actions that lower our carbon footprint. We also support culinary education in Poznań by offering internship programs to local schools.

We sort all waste diligently, and our suppliers collect bulk packaging for reuse.
Filtered Water
Served as an alternative to bottled water, reducing CO₂ emissions.
CO₂ Emissions
Working with local suppliers reduces transport impact; seasonal ingredients minimize the need for artificial farming and long storage.
Vegetarian Menu
We continually expand our range of vegetarian dishes.
Zero waste
We prepare dishes based on the expected number of Guests each day.
Leftovers inspire chips, garnishes, lemonades, and syrups.
Biodegradable Packaging
We have replaced single-use plastics with biodegradable, compostable, or reusable alternatives. Only paper straws are used.
Recycled Oil
Used oil is collected and recycled, becoming bio-components for eco-diesel, chemical processing, synthetic materials, or heating fuel.
