Every dish that reaches your table is made from scratch in our kitchen. We handcraft dumplings, pierogi, and noodles using traditional recipes, ensuring meticulous attention to every detail.

Our dishes are created using ingredients from our own production as well as those sourced from trusted local and regional suppliers. This allows us to offer our guests the highest quality, freshness, and authentic flavor.

Bread

Every day in our kitchen begins with baking fresh bread. It is made from Polish flour from the Ostrów Wielkopolski Mill, which enables us to serve bread with a unique taste and aroma.

 

Vegetables and Fruits – Bednarek Farm

The vegetables, fruits, and pickles used in our dishes come from Bednarek Farm. Produced according to proven, family recipes, they guarantee the highest quality and unforgettable taste.

Natural Juices – Wiatrowy Sad

The juices pressed in Wiatrowy Sad are made from fruits grown in the picturesque valley of the Mrogi River, near the Łódzkie Hills Landscape Park. They are 100% natural – without added preservatives, water, or sugar.

Groats – Kopytowa Mill

Organic groats from Kopytowa Mill form the basis of many of our traditional dishes. Their high quality allows us to highlight the authentic taste of our meals.

Honey – Janczarczyk Apiary

The family-run Janczarczyk Apiary has been producing honey for over 50 years on the Natura 2000 protected areas in the Notec Valley. We use their natural sweetness and aroma to enrich our dishes.

Preserves – Our Summer Treasures

Every summer and autumn, we prepare our own preserves, which we jar to be able to share the taste of summer all year round.

Fish – Gosławice Farm

Gosławice Farm is a place with a long-standing tradition. The fish from Gosławice are raised in conditions as close to natural as possible – in crystal-clear water and without GMOs or antibiotics. This ensures their freshness and excellent taste.

Alcohol – Tradition and Exceptional Flavor

Our alcohol menu features carefully selected options that combine history, craftsmanship, and unique taste. We support regional producers whose passion and tradition are reflected in every sip.

Regional Alcohols – The Taste of Tradition

  •  Beer – Browar Gzub: Craft, unpasteurized, and unfiltered beers brewed using traditional methods, offering richness of flavor and freshness.

  • Wine – Folwark Pszczew Vineyard: Wines made from traditional grape varieties grown in the Pszczew Landscape Park, embodying the essence of the local terroir.

  • Liqueurs and Vodkas – Smarduch Manufactory: Handcrafted liqueurs and spirits, aged in demijohns and barrels, creating masterpieces full of flavor and aroma, based on local fruits and herbs.

Through collaboration with local suppliers and our own production, we share with you the authentic taste of nature and tradition every day.

Our Environmental Commitment – Responsibility in Every Action

At our restaurant, we place great emphasis on environmental protection by implementing actions that minimize our impact on nature. Through sustainable resource management, promoting eco-friendly solutions, and reducing harmful emissions, we strive to meet the challenges of the modern world.

Sustainable Operations

  • Local Suppliers: Partnering with local producers and using seasonal ingredients significantly reduces the carbon footprint associated with food transport and storage.

  • Efficient Waste Management: We separate waste, enable its reuse, and return bulk packaging to our suppliers. We also minimize food waste by transforming leftovers into chips, lemonades, syrups, and garnishes.

  • Oil Recycling: Used oil is sent for recycling, where it is converted into biodiesel, chemical raw materials, or fuel for oil furnaces.

  • Biodegradable Packaging: We have eliminated plastic packaging in favor of compostable, biodegradable, or reusable alternatives. Our straws are exclusively paper-based.

Technology in Service of Ecology:

  • Modern Kitchen Equipment: Thanks to modernization, we have significantly reduced water and energy consumption.

  • Thermal Modernization: Improvements to our building, including an upgraded air conditioning system and automated lighting, have allowed us to decrease energy demand by as much as 30%.
